Vuyk Coconut Oil Mackerel Simmered in Soy Sauce Recipe

Ingredients- 2 Tbsp Vuyk Organic Extra Virgin Coconut Oil
- 1 whole Mackerel (cleaned)
- 2 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce
- 1 Tbsp Ginger Powder
- 1 pinch Salt (approx. 1/2 tsp)
- 1 pinch Black Pepper (approx. 1/2 tsp)
- 2 Tbsp Oligosaccharide (or honey/corn syrup)
- 1/2 medium Onion
Cooking Instructions
Step 1
First, pat the cleaned mackerel dry with paper towels. Make 2-3 shallow cuts on each side of the mackerel with a knife. This helps the sauce penetrate better and prevents the fish from breaking apart. Lightly season both sides of the fish with salt and pepper.

In a small bowl, combine the ingredients for the sauce. Mix together 2 Tbsp soy sauce, 2 Tbsp minced garlic, 1 Tbsp ginger powder, and 2 Tbsp oligosaccharide. Stir well until fully combined to create a delicious simmering sauce.

Peel and thinly slice the half onion into strips. Soak the sliced onions in cold water for about 5 minutes. This will reduce their pungent flavor and make them crisper. Drain the water just before using.
