Ingredients

  • 200g fresh spinach
  • 1/4 onion
  • A little bit of carrot

Dressing

  • 1 Tbsp minced garlic
  • 2.5 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp tuna extract sauce
  • 1.5 Tbsp fish sauce (anchovy or sand lance)
  • 0.5 Tbsp sugar
  • 0.5 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Trim the root ends of the fresh spinach and separate the leaves. Gently swish the leaves in water to rinse off any soil, letting it settle at the bottom, then change the water several times until it runs clear. Drain the spinach thoroughly in a colander and set aside.

Peel and thinly julienne the onion. Julienne the carrot into similar thin strips. Cutting the vegetables thinly ensures they absorb the dressing well.

In a large bowl, combine the drained spinach with the julienned onion and carrot. Add the dressing ingredients: 1 Tbsp minced garlic, 2.5 Tbsp gochugaru, 1 Tbsp tuna extract sauce, 1.5 Tbsp fish sauce, and 0.5 Tbsp sugar. Gently toss everything together, being careful not to bruise the spinach leaves. Use your fingertips for a light hand.

Continue to toss gently until the dressing is evenly distributed over the spinach. Once the spinach has slightly wilted, add 0.5 Tbsp of toasted sesame seeds and mix lightly.
