Inspired by Baek Jong-won’s home cooking recipes, I’ve swapped the usual pork neck for our family’s favorite chicken drumettes to create this exceptionally delicious curry. The drumettes are tender on the inside and beautifully browned on the outside, perfectly complementing the hearty vegetables for a dish the whole family will rave about!   • 10 chicken drumettes
  • 1 large onion, chopped coarsely
  • 1/2 carrot
  • 2 potatoes
  • 2 bell peppers (use various colors)

Curry Seasoning & Spices

  • Curry powder (half spicy, half mild) – use solid curry blocks
  • Pinch of black pepper
  • Pinch of salt
  • 1 cup milk (for tenderizing and deodorizing chicken)

Cooking Instructions

To tenderize the chicken and remove any gamey odors, soak the 10 chicken drumettes in 1 cup of milk for about 15-20 minutes. Afterward, rinse them thoroughly, pat dry, and season evenly with salt and black pepper. This step is crucial for enhancing the curry’s overall flavor.

Heat a lightly oiled pan over medium heat. Add the seasoned chicken drumettes and sauté until the outside is golden brown and slightly charred-looking, about 5-7 minutes. A slight char adds a wonderful depth of flavor.

In the same pan used for the drumettes, add the coarsely chopped onion, potatoes, and carrots. Sauté these vegetables until they begin to soften. As they cook with the residual chicken drippings, they’ll absorb the drumettes’ flavor, making the curry even richer.
