[Healthy & Delicious] How to Make a Cockle Tempura Burger with the Fishiness Removed by Green Tea

While discussing with my partner how to create a burger that is both healthy and captures the essence of a classic burger, the idea of using cockles came up, leading to this culinary creation. We’ve eliminated the fishy odor often associated with cockles by using green tea water. By making them into a tempura, we’ve brought out the subtle aroma of the cockles and achieved a crispy exterior with a chewy interior. This package of a burger is a triumph of health, taste, and texture! Furthermore, this cockle burger is perfect for those who prefer fast food due to their busy lives.
Burger Ingredients- Fresh cockles: 300g
- Crisp lettuce: 15g
- Hamburger buns: 2
- Sweet onion: 20g
Cooking Instructions
Step 1
First, let’s clean the cockles thoroughly. Add 1 tablespoon of coarse salt to the cockles and gently rub them with your hands to remove any impurities. Rinse them under running water. Repeat this process about 4 times to ensure the shells are clean.

Step 2
Now it’s time to purge the cockles. In a bowl, dissolve 1 tablespoon of coarse salt in 1 liter of clean water. This saltwater helps create an environment similar to the cockles’ natural habitat, aiding in effective purging.

Step 3
Place the cockles in the prepared saltwater and let them purge for about 1 hour. If the water becomes cloudy during this time, change it to fresh water for better results. This step removes any grit or impurities, ensuring a clean taste.

Step 4
After purging, rinse the cockles again under cold water. In a pot, add a little water and the cockles, then blanch them over low heat for about 5 minutes. Be careful not to overcook them, as they can become tough.

Drain the blanched cockles and then soak them in the prepared green tea water for 30 minutes. The subtle aroma of green tea will effectively neutralize any fishy smell from the cockles and enhance their chewy texture.

Next, let’s prepare the tempura batter for frying the cockles. In a bowl, add 300g of tempura flour and a pinch of pepper, then mix lightly.

Gradually add water to the tempura flour, mixing until you achieve a thick batter consistency. The batter should be thick enough to coat the cockles but still flow gently when lifted with a spoon.

Coat the cockles, removed from the green tea water, evenly with the tempura batter. Ensure the batter adheres well. Then, carefully drop them into cooking oil preheated to 180°C (350°F) and fry for about 3 minutes until golden brown. Fry them sufficiently so the tempura becomes crispy as the cockles cook inside.

Step 9
Once the cockle tempura is golden brown, remove them from the oil and place them on a paper towel to drain excess oil. This will ensure they remain crispy and not greasy.

To enhance the flavor of the hamburger buns, lightly toast them on a dry skillet. Toasting them brings out their aroma and makes them even more delicious.

Spread tartar sauce evenly on the inside of the toasted hamburger buns. The sauce will soak into the bread, adding a lovely flavor.

Wash the lettuce thoroughly, pat it dry, and tear it into bite-sized pieces. Thinly slice the onion.

Now that all the ingredients are ready, it’s time to assemble the burger! On the bottom half of the bun, layer the lettuce, onion, and the crispy cockle tempura.
