Delicious Braised Sole Fish Made with Fresh, Prepared Sole

Main Ingredients- 2 prepared sole fillets (approx. 350g)
- 1/2 medium onion
- 2 stalks green onion
- 1 Tbsp dried chili pepper (optional, for extra spice)
- 1 Tbsp dried red chili pepper (optional, for color)
Seasoning Ingredients- 2 Tbsp soy sauce
- 1 Tbsp anchovy sauce
- 2 Tbsp cooking wine (mirin)
- 1 Tbsp minced garlic
- 2 Tbsp red pepper powder
- 3 cups water or broth
- Pinch of black pepper

Cooking Instructions
Step 1
To help the seasoning penetrate deeply, make scores on both sides of the sole fillets. Gently pat the fish dry with paper towels. Then, holding your knife at an angle, make deep cuts about 2-3 cm apart along the back and belly of the fish. This step is crucial for ensuring the flavors soak all the way through, resulting in a much more delicious braised dish.
Step 2
Rinse the prepared sole fillets under running water and drain them thoroughly. Slice the onion into thick strips. Cut the green onions diagonally into 3-4 cm lengths. If you are using dried chili peppers, rehydrate them in cold water until softened, then cut them into appropriate sizes. (You can omit this if you don’t have dried chilies.)

Now, let’s make the delicious seasoning for our braised sole! In a bowl, combine the soy sauce, anchovy sauce, cooking wine, minced garlic, red pepper powder, and black pepper. Mix well. Add a small amount of water or broth to help dissolve the ingredients, then add the remaining liquid and stir until evenly combined.

Line the bottom of a deep pan or pot with the sliced onions. Arrange the scored sole fillets on top of the onions. Scatter the chopped green onions and dried chili peppers over the fish. Pour the prepared seasoning mixture evenly over the sole. Pour any remaining water or broth into the cup you used for the seasoning, and then carefully pour it around the edges of the pan. This helps prevent the seasoning from burning and adds depth of flavor as the fish cooks.
Step 5
Bring the mixture to a boil over high heat, then reduce the heat to medium-low, cover the pan, and let it simmer for about 15-20 minutes. Baste the fish with the sauce from the pan occasionally; this ensures the flavor penetrates deeply into the fish, making it even tastier.
