You can easily make a sweet and delicious treat called ‘Matang’ using these leftovers, offering a different charm than traditional sugar-coated sweet potatoes. This recipe skips the deep-frying step, making it incredibly quick and convenient, perfect for kids’ snacks or as a delightful accompaniment to tea for adults.

  • 2 boiled sweet potatoes (medium size)
  • 5 Tbsp oligosaccharide (rice syrup)
  • 3 Tbsp cooking oil
  • A pinch of black sesame seeds (for garnish)
  • 1/2 tsp soy sauce

When making Matang from raw sweet potatoes, you need to cut them into pieces and lightly deep-fry them. However, by using pre-boiled sweet potatoes, you can skip this frying step. This allows you to create delicious sweet potato Matang much faster and more conveniently.

First, cut the prepared boiled sweet potatoes into bite-sized pieces (about 2-3 cm cubes). Since boiled sweet potatoes are more fragile than raw ones, cutting them into moderate sizes, rather than too small, helps maintain their shape better.

Heat 3 tablespoons of cooking oil in a pan and add the cut sweet potatoes. Stir-fry over medium-low heat until the surface of the sweet potatoes is lightly golden and slightly firm. This light stir-frying helps prevent the sweet potatoes from falling apart when coated with the oligosaccharide syrup later. Next, add 5 tablespoons of oligosaccharide and 1/2 teaspoon of soy sauce and mix well.
