Here’s a recipe for a spicy pollack flake and radish soup, featuring the savory flavor of pollack flakes and the refreshing taste of radish. It’s made easily without any fuss, offering a deep, satisfying flavor.
Main Ingredients- 2/3 cup dried pollack (dried pollack jerky), cut into 2-3 cm pieces
- 500g radish, cut into bite-sized chunks
- 1/4 stalk of green onion, sliced diagonally
- 2 Korean green chili peppers, sliced diagonally
- 1/2 red chili pepper, sliced diagonally
- 1 liter rice water (or regular water)
- 1 pack anchovy and kelp broth sachet (or homemade anchovy broth)
Seasoning- 2 Tbsp cooking wine (to remove fishy odor)
- 1/2 Tbsp minced garlic
- 1 Tbsp fish sauce (or soy sauce for soup)
- Pinch of fine salt (to taste)
- Pinch of black pepper (for aroma)

Cooking Instructions
Step 1
Cut the dried pollack into manageable pieces, about 2-3 cm long, using scissors. Place them in a bowl, add 2 Tbsp of cooking wine, mix gently, and let it marinate for about 10 minutes. This step helps to eliminate any fishy smell and tenderize the pollack.
Step 2
Peel the radish and slice it into bite-sized, flat pieces (like half-moons). Slicing them too thin might cause them to break apart during cooking, so aim for a moderate thickness.
Step 3
Pour 1 liter of rice water into a pot and add the anchovy and kelp broth sachet. If you don’t have rice water, regular water works just fine. You can also use store-bought broth instead of the sachet.
Step 4
Once the water comes to a boil, remove and discard the broth sachet. Add the prepared dried pollack and the sliced radish to the pot. Cover with a lid and simmer over medium heat for about 15 minutes, or until the radish becomes translucent and tender.

Thinly slice the green chili peppers, red chili pepper, and green onion diagonally. Adjust the amount of chili peppers according to your preference; feel free to add more green chili peppers if you enjoy a spicier soup.

When the radish is sufficiently tender, add all the sliced chili peppers and green onion to the pot. Stir in 1/2 Tbsp of minced garlic and 1 Tbsp of fish sauce. Taste and continue to simmer for another 7-8 minutes, or until the radish is completely soft. If you don’t have fish sauce, soy sauce for soup can be used as a substitute.
Step 7
Finally, add a pinch of black pepper. Taste the soup and season with fine salt as needed to achieve your desired flavor. Your delicious and refreshing pollack flake and radish soup is ready!
