Few foods are as divisive as Hong-eo (fermented skate). However, for those who love its unique, pungent flavor and chewy texture, this dish is a true delicacy. Combining tender grilled pork neck with crisp kimchi and aged kimchi creates a symphony of flavors and textures. If you’re a fan of fermented seafood, you’ll particularly appreciate the depth of this Hong-eo Samhap. While you might enjoy various skate dishes like pan-fried, deep-fried, or seasoned skate, if the skate fin soup was a bit too much, this recipe offers a more approachable way to savor the unique charm of Hong-eo.

  • Pork neck 500g
  • Skate body slices 150g
  • Spicy napa cabbage salad (Ssam chou geotjeori) 100g
  • Aged kimchi 4 leaves

Optional Additions (to taste)

  • Soybean powder
  • Sliced garlic
  • Gochujang (Korean chili paste)
  • Fresh lettuce and other greens for wrapping

Cooking Instructions

Step 1

Prepare the fresh pork neck (also known as ‘moksim’). We’re using 500g, but will only be using half of it for this recipe. For presentation, we’ll be slicing the pork into generous pieces to grill. While I personally enjoy thinly slicing and frying it, larger cuts make for a more visually appealing dish.

Prepare 150g of skate body slices. The remaining skate can be used in ramen or other dishes, ensuring nothing goes to waste and you can enjoy it further.

On the serving platter, arrange the spicy napa cabbage salad (ssam chou geotjeori) and the well-prepared aged kimchi leaves. The crispness of the salad and the deep flavor of the aged kimchi will significantly enhance the overall taste of the Hong-eo Samhap.

Grill the pork neck until it’s golden brown and perfectly cooked. Grilling over medium-high heat will ensure a crispy exterior while keeping the inside juicy. Adding sliced garlic to the pan while grilling will infuse the pork with extra aroma and flavor.

Arrange the beautifully grilled pork neck onto the prepared platter. You can place it on top of the salad and kimchi, or alongside them, to create an abundant and appealing presentation.
