Ingredients

  • 1 packet of instant noodles (any type works well!)
  • 2 Tbsp stir-fried beef gochujang (homemade or store-bought)
  • 1 egg (yolk only)
  • 1 Tbsp noodle soup powder (from the noodle packet)
  • 1 Tbsp spicy soy sauce (a mix of soy sauce, chili powder, sugar, minced garlic, etc.)
  • 1 Tbsp sugar (adjust to taste)
  • 1 Tbsp vinegar
  • 450ml water (refer to your noodle packet for the exact amount)
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, let’s prepare the flavorful Abura Soba sauce! In a mixing bowl, combine half of the noodle soup powder (1 Tbsp), 1 Tbsp of the spicy soy sauce, 1 Tbsp of sugar, and 1 Tbsp of vinegar. Mix well until there are no lumps. Preparing the sauce in advance makes it much easier to toss with the noodles later.

Now it’s time to cook the noodles. Bring 450ml of water to a rolling boil in a pot over high heat. Once the water is boiling, add the noodle packet and the dried vegetable mix. Cook the noodles for about 30 seconds to 1 minute longer than the time indicated on the packet. Cooking the noodles slightly longer allows them to absorb the sauce better, making them even more delicious.

Once the noodles are cooked to perfection, drain them in a colander and rinse quickly under cold running water. This step helps to prevent the noodles from becoming mushy and maintains their delightfully chewy texture. Gently shake off any excess water after rinsing.

Arrange the drained noodles attractively in a serving bowl. Pour the prepared Abura Soba sauce evenly over the noodles. Generously top with 2 Tbsp of the stir-fried beef gochujang. Finally, carefully place the fresh egg yolk in the center. Your delicious Abura Soba is now ready! For an extra touch of nutty flavor, sprinkle some toasted sesame seeds on top.
