Ingredients

  • 1 ripe banana
  • 100ml unsweetened soy milk
  • 1 fresh egg
  • 20g agave syrup (or adjust to taste)
  • 20g vegetable oil (e.g., canola, grapeseed)
  • 100g high-quality brown rice flour
  • 3g baking powder
  • 1 teaspoon salt (approx. 1g)

Cooking Instructions

Step 1

First, mash 1 ripe banana thoroughly with a fork until smooth. It’s important to mash it well without any lumps. The mashed banana will add moisture and natural sweetness to your pancakes.

In a separate bowl, combine 100ml of unsweetened soy milk, 1 fresh egg, 20g of agave syrup, and 20g of vegetable oil. Whisk gently with a whisk until the liquid ingredients are well combined.

Sift 100g of high-quality brown rice flour, 3g of baking powder, and 1 teaspoon of salt into the bowl with the wet ingredients. Sifting the dry ingredients helps prevent lumps and results in a smoother batter.

Now, add the mashed banana from step 1 to the wet mixture in step 2 and lightly mix. This helps the banana’s sweetness and aroma meld with the soy milk and egg.

Finally, add the dry ingredients from step 3 to the bowl containing the wet ingredients from step 4. Mix quickly with a spatula or spoon, being careful not to overmix. Mix only until the dry flour is no longer visible to prevent the pancakes from becoming tough. A few small lumps are perfectly fine.

Lightly grease a non-stick pan over medium-low heat with a little vegetable oil, wiping off any excess with a paper towel. Pour about 1/4 cup of batter per pancake onto the pan. Cook over low heat for 2-3 minutes per side, or until golden brown. You’ll know it’s time to flip when small bubbles start to form on the surface. Serve warm and enjoy!
