  • 1.5 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp fish sauce or tuna extract
  • 1 Tbsp plum extract (or 0.5 Tbsp sugar)
  • Sesame seeds, to garnish

First, wash the cucumber thoroughly. You can peel it if you prefer, or leave the skin on for extra texture and nutrients. Slice it in half lengthwise, then thinly slice it on a bias (diagonally). This shape helps the cucumber absorb the dressing well.

Peel the 1/4 onion and slice it into thin matchsticks. Try to keep the slices uniform for even cooking and texture.
