  • 7 Tbsp soy sauce
  • 3 Tbsp sugar
  • 2 cups water (filled)

First, hard-boil the eggs. Add the 10 eggs to boiling water (you can add a pinch of salt to prevent cracking, optional) and boil for about 20 minutes until fully cooked. Ensuring the yolks are firm will help them maintain their shape and prevent breakage when braising.

In a wide pot, combine 7 Tbsp soy sauce, 3 Tbsp sugar, and 2 cups of water. Add the 1/2 onion, 7 whole garlic cloves, 2 parsnip roots, and 2 pieces of dried kelp. If you prefer a less sweet, more savory flavor, feel free to adjust the sugar quantity.

Once the sauce mixture comes to a boil, carefully add the hard-boiled eggs. Remove the dried kelp at this stage. Leaving the kelp in for too long can make the broth cloudy, so it’s best to remove it after it has infused its flavor.

After adding the eggs, adjust the heat to medium-low and simmer gently. For a hint of spiciness and a refreshing taste, add 2 Korean green chili peppers. If this dish is for children, you can adjust the number of chilies or omit them entirely; a slight spiciness can enhance the flavor. Chilling them in the refrigerator overnight will mellow the spiciness and deepen the savory taste.
