Main Ingredients

  • 300g Young Garlic (prepared weight)
  • 1 cup Dried Shrimp (approx. 30g, heads and tails removed)

Seasoning

  • 1 tsp Salt
  • 1 Tbsp Perilla Oil
  • 2/3 Tbsp Anchovy Sauce (approx. 10ml)
  • 1 tsp Sugar
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Wash the fresh young garlic thoroughly under running water. It’s crucial to check and wash meticulously, especially between the leaves where soil and debris can easily accumulate. After washing, drain the young garlic and cut it into 4cm lengths, then place it in a stir-frying pan.

Prepare about 1 cup of dried shrimp using a paper cup. (Removing the hard heads and sharp tails of the dried shrimp makes them easier to eat.) Add the dried shrimp to the pan with the young garlic. Add the prepared seasoning ingredients (salt, perilla oil, anchovy sauce, sugar) one by one. Stir and stir-fry lightly as you add the seasonings to ensure they are evenly distributed.

Stir-fry over medium-low heat for about 3-5 minutes until the young garlic softens slightly and the savory aroma of the dried shrimp rises. Anchovy sauce adds umami, but too much can make it salty, so stick to the measured amount or adjust to your taste. Finally, sprinkle with toasted sesame seeds for an extra nutty flavor, completing this delicious stir-fried young garlic and dried shrimp. Serve it over warm rice for a satisfying meal, or enjoy it as a delightful side dish!
