We’re making a single serving of chicken kimchi fried rice. First, take the leftover roasted chicken and shred the meat, focusing on the breast or thigh meat. Use your hands to pull the meat into bite-sized pieces. Discard any bones or skin.

Finely chop the kimchi. Heat a pan over medium heat with a little cooking oil. Add the chopped kimchi and stir-fry until it becomes slightly softened but still retains a pleasant crunch. If your kimchi is very sour, you can add a tiny pinch of sugar to balance the flavor.

Once the kimchi is nicely sautéed, add 1/2 tablespoon of gochujang and stir-fry for about a minute with the kimchi until the paste is well incorporated. Then, add the shredded chicken and stir everything together to coat the chicken with the kimchi and gochujang mixture.

Now, add 1/2 bowl of cooked rice to the pan. Use a spatula to gently break up any clumps of rice and stir-fry, mixing it with the chicken and kimchi. Finally, drizzle a bit of perilla oil around the edge of the pan for a nutty aroma, and continue to stir-fry for another 1-2 minutes until all the ingredients are evenly combined.
