  • 300g Fresh Beef Sirloin
  • 1 Bell Pepper (e.g., red, yellow)
  • 3 Shiitake Mushrooms
  • 1/2 Onion
  • 3 Whole Garlic Cloves
  • 5 Korean Green Chili Peppers (Gworigochu)
  • 1 Tbsp All-purpose Flour
  • Pinch of Salt (for seasoning meat)
  • Pinch of Pepper (for seasoning meat)
  • Olive Oil (for cooking)
  • 20g Butter
  • Pinch of Parsley Flakes (for garnish)

Perfect Chop Steak Sauce

  • 3 Tbsp Ketchup
  • 2 Tbsp Worcestershire Sauce
  • 1.5 Tbsp Brown Sugar
  • 1 Tbsp Vinegar
  • Pinch of Pepper (for sauce)
  • 90ml Water (for sauce consistency)
  • 2 Tbsp Store-bought Steak Sauce

First, pat the beef sirloin dry with paper towels to remove any excess blood. This step is crucial for a clean flavor without any gamey smell. Then, cut the beef into bite-sized cubes, about 2-3 cm in size.

Season the cut beef with salt and pepper. You can use seasoned salt if you prefer. For extra tenderness and flavor, you can also add 1 tablespoon of olive oil and gently mix it in.

Sprinkle 1 tablespoon of all-purpose flour over the seasoned beef and toss gently to coat. The flour helps to lock in the juices of the meat and allows the sauce to adhere better, creating a richer flavor.

Now, it’s time to prepare the vegetables and mushrooms that will add color and texture to your chop steak. Cut the bell peppers, shiitake mushrooms, and onion into bite-sized cubes, similar in size to the beef. You can also slice the Korean green chili peppers and lightly smash or slice the whole garlic cloves.

The secret to a delicious chop steak lies in its sauce! Preparing it in advance can save you time during cooking. In a bowl, combine ketchup (3 Tbsp), Worcestershire sauce (2 Tbsp), brown sugar (1.5 Tbsp), vinegar (1 Tbsp), a pinch of pepper, and store-bought steak sauce (2 Tbsp). Stir well until the sugar is dissolved. (Alternatively, you can mix in the water (90ml) at this stage to adjust the sauce consistency.)

Heat some olive oil or cooking oil in a skillet over medium-high heat. Add the beef cubes and sear them until they are nicely browned on all sides. Cooking over high heat initially helps to seal in the juices, keeping the meat tender and moist.

Once the beef is browned, reduce the heat to medium. Add the butter (20g) and the prepared garlic cloves to the pan. Sauté them with the beef, allowing the butter to melt and the garlic to become fragrant, infusing its aroma into the meat.

Sauté the beef, garlic, and butter for a moment. Then, add the prepared vegetables and mushrooms to the pan. Stir everything together and cook until the vegetables are slightly tender-crisp. If you are adding the sauce now, push the cooked ingredients to one side of the pan and pour the sauce into the empty space to let it bubble.

If you made the sauce in step 4 and are adding it now, or if you’re using pre-made sauce, pour in the water (90ml) to achieve the desired sauce consistency. Simmer over medium-low heat for about 1-2 minutes, allowing the sauce to thicken and coat the ingredients. Be careful not to overcook, as the vegetables can become mushy.
