Today, I’m excited to share a recipe for a refreshingly tangy and crisp Buchu Muchim, the perfect accompaniment to a special meal, especially when you’re craving duck! This delightful side dish doubles the flavor when enjoyed with smoked duck, a treat I brought back from Korea. I’ll guide you through Baek Jong-won’s secret method, making it incredibly easy for even beginners. The crispness of the thinly sliced onions combined with the fresh chives creates a wonderfully appetizing dish that will stimulate your palate.

  • 1 bunch fresh chives (approx. 100g)
  • 1/2 medium onion

Golden Seasoning Sauce

  • 3 Tbsp soy sauce
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1 Tbsp oligodang (corn syrup) or other sweetener (adjust to taste)
  • 1 Tbsp fresh vinegar
  • 1 Tbsp toasted sesame seeds
  • A little sesame oil (for finishing)
  • Ice water (optional, to enhance onion crispness)

Cooking Instructions

Step 1

First, wash the chives thoroughly under running water to remove any dirt or debris. Gently shake off excess water and set aside.

Cut the cleaned chives into approximately 5cm lengths. This size is easy to manage and eat. Avoid cutting them too long.

Slice the onion as thinly as possible. The thinner the slices, the better they will meld with the chives and maintain their crisp texture. (Tip: Soaking the sliced onions in cold or ice water for about 5 minutes will make them even crisper.)

Place the cut chives into a large bowl. If you soaked the onions, drain them well and add them to the bowl as well. Gently loosen the chives and onions so they are separated.

Now, let’s make the delicious seasoning sauce! In a small bowl, combine 3 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp oligodang, 1 Tbsp vinegar, and 1 Tbsp toasted sesame seeds. Mix well. Finally, add a little sesame oil for extra aroma and flavor.

Gradually add the prepared seasoning sauce to the bowl with the chives and onions. Toss gently with your fingertips to combine. Avoid vigorous mixing, as this can bruise the chives and make them mushy. Ensure the seasoning is evenly distributed.
