Easy White Bread Lasagna Recipe Using Leftover Vegetables for a Wonderful Brunch Menu
I made this white bread lasagna using leftover vegetables from making ratatouille. It’s simple and makes a fantastic brunch dish. Perfect for hosting guests or a weekend treat!
Ingredients- 2-3 slices of white bread (adjust to your preference)
- Assorted leftover vegetables (onions, bell peppers, mushrooms, zucchini, etc.)
- Tomato sauce (generous amount, store-bought or homemade)
- Mozzarella cheese (plenty!)
- Black olives (for garnish and added flavor, optional)
Cooking Instructions
Step 1
First, neatly trim the crusts off the slices of white bread. This step helps to soften the bread and makes for a cleaner, more refined lasagna.

Next, use a rolling pin to flatten and spread out the bread slices until they are thin and wide. If you don’t have a rolling pin, a glass or bottle will also work. Thinning the bread makes it easier to layer and mimics the texture of lasagna noodles.
Step 3
Prepare your leftover vegetables that will add flavor to the lasagna. Any vegetables you have on hand will work wonderfully, such as onions, bell peppers, mushrooms, or zucchini. Slice them thinly or chop them into small, bite-sized pieces. Thinly sliced vegetables cook faster and have a more tender texture.

Now it’s time to assemble the lasagna. Place a layer of the flattened white bread at the bottom of your oven-safe dish or pan. Spread a generous amount of tomato sauce evenly over the bread. It’s important to apply enough sauce so the bread becomes nicely moist.

On top of the sauced bread, arrange your prepared vegetables evenly. As the vegetables cook, they will release moisture, adding to the overall flavor.

Lightly spread more tomato sauce over the vegetables, then cover with another slice of flattened bread. Repeat this layering process: ‘bread – tomato sauce – vegetables’ about 2 to 3 times. The more layers you create, the richer and more delicious your lasagna will be.

Finally, generously sprinkle mozzarella cheese over the top layer of the lasagna. The cheese will melt and create a beautiful golden crust, binding everything together. Place the assembled lasagna into a preheated oven at 170°C (340°F) for approximately 15 minutes, or until the cheese is melted and beautifully golden brown. Adjust the baking time based on your oven’s specifications.

Serve immediately while it’s warm and fresh from the oven! The freshly baked white bread lasagna is simply delightful. For an enhanced meal, you can serve it with a side of fresh salad or some refreshing yogurt, according to your preference.
