  • 1 block firm tofu (approx. 300g)
  • 1/4 onion, finely chopped
  • 1 cup milk (200ml)
  • 5 tablespoons curry powder (approx. 50g, adjust to taste)
  • 2 eggs
  • A pinch of parsley flakes for garnish

Cooking Instructions

First, pat the block of tofu (about 300g) thoroughly dry with paper towels. This step is crucial to prevent it from breaking apart and to achieve a nicely browned, toasty flavor when stir-frying.

Place the prepared tofu in a bowl and mash it finely using your hands or a fork until there are no large lumps. This ensures the tofu blends smoothly with the curry. Heat a non-stick pan over medium heat, add a little cooking oil, and add the mashed tofu. Stir-fry, making sure it doesn’t burn.

Continue to stir-fry the tofu for about 5 minutes until it’s lightly browned and some of its moisture has evaporated. Transfer the stir-fried tofu to a separate bowl for now. This pre-cooking step enhances its texture.

In the same pan, add a little more cooking oil and sauté the finely chopped onion over medium-low heat until translucent. The natural sweetness of the onion will emerge, adding depth to the curry’s flavor.

Once the onions are soft and sautéed, pour in 1 cup (200ml) of milk. Adding milk will make the curry much smoother and creamier.

As the milk mixture starts to simmer gently, add 5 tablespoons of curry powder and whisk well to dissolve any clumps. The amount of curry powder can be adjusted based on the saltiness and thickness of your preferred curry powder brand.

Once the curry sauce begins to thicken, return the stir-fried tofu to the pan. Crack in the 2 eggs and whisk quickly to combine everything. Whisking rapidly after adding the eggs prevents them from clumping and ensures they are well incorporated into the sauce.

Continue to cook, stirring everything together, for another 1-2 minutes. Cook until the sauce reaches a thick, creamy consistency, indicating your delicious Tofu Curry sauce is ready.
