Cook a delicious and healthy meal with seasonal dried radish greens (siraegi) this winter. The chewy texture of siraegi combined with perfectly cooked rice creates a deep, satisfying flavor, making it an ideal and hearty meal. Enjoy it even more when mixed with a simple seasoning sauce.
Main Ingredients- 150g boiled and peeled dried radish greens (siraegi) (pre-boiling and freezing makes it convenient)
- 1 cup (180g) short-grain rice
- 1 cup (200ml) water (adjust based on rice type and rice cooker)
Siraegi Seasoning- 0.5 Tbsp Korean soup soy sauce (guk-ganjang)
- 2 pinches of salt
- 1 Tbsp perilla oil
Bibim (Mixing) Sauce- 1 chili pepper (seeds removed and minced)
- 2 Tbsp soy sauce (yangjo-ganjang)
- 1 Tbsp water
- 1 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp minced garlic
- 1 Tbsp perilla oil
- Sesame seeds to taste
- 0.5 Tbsp Korean soup soy sauce (guk-ganjang)
- 2 pinches of salt
- 1 Tbsp perilla oil
Bibim (Mixing) Sauce- 1 chili pepper (seeds removed and minced)
- 2 Tbsp soy sauce (yangjo-ganjang)
- 1 Tbsp water
- 1 Tbsp gochugaru (Korean chili flakes)

- 1 Tbsp perilla oil
- Sesame seeds to taste

Tip! For the best flavor and longevity, it’s recommended to boil dried radish greens (siraegi) immediately after purchase, portion them, and then freeze. Pre-preparing them in bite-sized pieces makes cooking much easier.

Carefully peel the boiled siraegi. Removing the tough outer skin ensures a more tender and delicious result.

Rinse the prepared siraegi under running water and gently squeeze out excess water. It should feel moist but not dripping wet when held in your hands.

Wash the short-grain rice and let it soak for about 10 minutes. While the rice is soaking, finely chop the siraegi into bite-sized pieces (about 1-2 cm long).

The soaking time for the rice is approximately 10 minutes (when using an electric pressure cooker).

Now, let’s make the delicious bibim (mixing) sauce! In a bowl, combine the minced chili pepper, soy sauce, water, gochugaru, minced garlic, perilla oil, and sesame seeds. Mix well. You can add a pinch of sugar if you prefer a touch of sweetness.

Prepare to cook the rice by placing the seasoned siraegi in the rice cooker. First, gently mix the siraegi with Korean soup soy sauce, salt, and perilla oil. Taste and adjust the seasoning if needed by adding more salt or soup soy sauce. This step is key to the deliciousness of the rice!

Layer the seasoned siraegi at the bottom of the rice cooker, then evenly spread the soaked rice on top.

Using rice water (water used to rinse the rice) for the cooking water adds a richer flavor. Use 1 cup of rice water for 1 cup of uncooked rice (before soaking). The amount of water might need slight adjustment depending on the type of rice and your rice cooker.

Select the ‘Normal Cook’ setting on your electric pressure cooker to cook the rice. Using a pressure cooker ensures fluffy rice grains and allows the siraegi flavor to infuse beautifully into the rice.
