  • 1 kg fresh duck meat (cleaned)
  • 1 large leek or scallion stalk
  • 1 medium onion
  • 1/2 medium carrot
  • 1 bunch chives
  • 1 pack enoki mushrooms

Start by preparing the fresh duck meat. Trim any excess visible fat. Then, in a bowl, combine the duck with soju and ginger juice. Gently mix them together to help eliminate any gamey odors. Let it marinate for about 10 minutes.

In a separate bowl, prepare the marinade. Add gochujang, gochugaru, soy sauce, sugar, mirin, black pepper, ginger juice, and soju. Stir well until the sugar is dissolved. If you find the gochujang too strong, you can reduce its amount and increase the gochugaru slightly for a spicier flavor.

Pour the prepared marinade over the duck meat that you’ve already marinated with soju and ginger. Using your hands, thoroughly mix the duck and marinade, ensuring every piece is coated evenly. For the best flavor, let it marinate for at least half a day, or preferably overnight, in the refrigerator. This allows the flavors to deepen.

Heat a pan over medium-high heat. Add the marinated duck meat and stir-fry briskly to cook off some of the moisture and rendered fat. Duck releases a significant amount of fat, so it’s best to cook it and then place it on a tabletop grill or a heated serving plate to eat, allowing diners to cook it to their preference. Once the duck changes color, reduce the heat to medium and continue cooking until done.

Now, prepare for serving. Once the duck is mostly cooked, heat a tabletop grill or a heavy-bottomed pan. Spread thinly sliced onions on the bottom of the grill or pan, then arrange the cooked duck meat attractively on top.

Wash the chives thoroughly. Cut them into lengths of about 3-5 cm. In a small bowl, gently toss the cut chives with a pinch of salt, a little gochugaru, sesame seeds, and sesame oil. Be careful not to overmix, as this will make the chives wilt too much.

Artfully arrange the lightly seasoned chives around the duck meat on the grill or pan. The fresh aroma of the chives will complement the duck beautifully.

Trim the base of the enoki mushrooms and gently separate the strands. Place the enoki mushrooms on top of the duck and chives. Their slightly chewy texture adds another delightful layer to the dish. Your Ori Jumeok is now ready to be served!

The aromatic perilla leaf enhances the duck’s flavor and also helps to mellow any strong taste from the raw chives, making it enjoyable for everyone. You can also serve it with pickled radish wraps or ssamjang.
