  • 2/3 medium radish (approx. 300-400g)
  • 500ml water

Cooking Instructions

Wash the radish thoroughly, peel it, and cut it into about 1cm thick half-moon shapes or bite-sized pieces. Cut them a bit thicker so they don’t break apart during cooking.

Rinse the boiled dried radish greens briefly under running water and squeeze out excess moisture. Cut them into manageable lengths of about 3-4cm. Trim any thick stems with scissors for better seasoning absorption. In a large bowl, combine the prepared dried radish greens with 3 Tbsp doenjang, 2 Tbsp gochugaru, 2 Tbsp dried shrimp powder, 1 Tbsp minced garlic, and 2 Tbsp maesilcheong. Add the chopped green onions and gently mix everything with your hands until the seasoning is evenly distributed.

Add the sliced radish to the seasoned dried radish greens and gently toss to coat the radish with the seasoning as well. Pre-seasoning the radish this way allows its natural sweetness to meld with the savory flavors of the radish greens for a deeper taste.

Transfer the seasoned radish greens and radish mixture into a wide pot or wok. Pour in 500ml of water. Bring to a boil over high heat, then reduce the heat to medium. Cover or leave the lid ajar and let it simmer gently until the liquid reduces. Cook until the liquid becomes slightly thick.

Simmer over medium heat for about 15-20 minutes, or until the liquid has significantly reduced and the ingredients are well-infused with the seasoning. Stir occasionally to prevent sticking. Towards the end, taste the dish and season with soy sauce (guk-ganjang) or salt if it needs more saltiness. Be cautious adding more doenjang, as it can make the dish too salty. Add thinly sliced red and green chilies and simmer for a little longer to add a touch of heat.
