Main Ingredients- 2 large eggs
- 10 frozen dumplings
- 1/2 large green onion (scallion)
- 1/4 onion
- 1 dried shiitake mushroom (or 1 fresh shiitake mushroom)
- 1 liter (4 cups) water
Seasoning and Aromatics- 2 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp anchovy extract (fish sauce)
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Korean green chili pepper (optional, for extra spice)
- Pinch of salt
- 2 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp anchovy extract (fish sauce)
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Korean green chili pepper (optional, for extra spice)
- Pinch of salt
Cooking Instructions
Step 1
First, prepare the vegetables. If using dried shiitake mushrooms, rehydrate them in lukewarm water, trim the tough stems, and thinly slice them. If using fresh shiitake mushrooms, simply clean and slice them thinly. Thinly slice the onion as well. Slice the green onion and Korean green chili pepper (if using) on an angle to add a fresh aroma.
Step 2
Crack the 2 large eggs into a bowl. Gently whisk them until the yolks and whites are well combined. Whisking vigorously or using a whisk can help break down the egg white membranes for a smoother texture.
Step 3
In a deep pot, combine 1 liter of water, 2 Tbsp of soup soy sauce, 2 Tbsp of anchovy extract, and the sliced shiitake mushrooms. Bring this mixture to a boil over high heat. This step allows the deep flavor of the shiitake mushrooms to infuse the broth.
Step 4
Once the broth reaches a boil, reduce the heat to medium. Stir in 1 Tbsp of minced garlic and 2 Tbsp of gochugaru, ensuring they are well dissolved. Add the frozen dumplings and the thinly sliced onion to the pot. The onion will contribute a refreshing sweetness to the broth.
Step 5
Let the soup simmer with the dumplings and onion for a few minutes. As soon as the soup comes back to a rolling boil, slowly drizzle the prepared egg mixture in a circular motion around the edges of the pot.
Step 6
Avoid stirring immediately after adding the egg, as this can cause the egg to break apart and make the broth cloudy. Wait for the egg to gently set and form soft curds before lightly stirring. This technique helps maintain a clear and clean-tasting broth.
Step 7
Once the dumplings are cooked through and the broth has slightly reduced, taste and adjust the seasoning with a pinch of salt if needed. For an extra depth of flavor, you can gently break 1 or 2 dumplings with the back of your spoon to release their filling into the soup.
