Ingredients- 800ml water
- 1/2 medium beet
- 1 packet cream soup mix (store-bought)
- 1 tablespoon ground peanuts (for garnish)
Cooking Instructions

Begin by thoroughly washing and peeling the half beet. Chop it into manageable pieces and place it in a blender. Add 800ml of water and blend until you achieve a smooth beet puree. (Apologies, I forgot to take a photo of the beet water itself! 😅) Set this beet mixture aside.

Now, grab a pot and carefully pour the prepared 800ml of beet water into it.

Set your stove to medium-high heat and bring the beet water to a boil. Once it starts boiling, reduce the heat slightly to maintain a gentle simmer.

While the beet water is simmering, carefully add the entire packet of cream soup mix to the pot. It’s important to prevent the soup powder from clumping.

Using a spatula or whisk, stir continuously to ensure the cream soup powder dissolves completely and doesn’t form lumps. Stirring well until all the powder is incorporated into the liquid is key to a smooth texture.

Continue to stir gently throughout this process to prevent the soup from sticking to the bottom of the pot. Keep the heat low and simmer gently, stirring occasionally to avoid burning. Patience here ensures a perfectly creamy soup.

The soup is ready when it has thickened to your desired consistency and the flavors have melded beautifully. Simmer until the beet and cream soup mixture has reduced and achieved a luscious texture. Adjust simmering time for desired thickness.
