Main Ingredients- Pork neck 600g
- 1/2 Onion
- 6 Perilla leaves (깻잎)
- Glutinous rice flour, as needed (for coating)
Pork Marinade- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 2 Tbsp Soy sauce
- 1 Tbsp Cooking wine (Cheongju)
- 1/2 tsp Ginger powder
- A pinch of Black pepper
Yuzu Glaze Sauce- 2 Tbsp Yuzu marmalade/jam
- 6 Tbsp Soy sauce
- 2 Tbsp Sugar
- 3 Tbsp Lemon juice
- 2 Tbsp Cooking wine (Mirin)
- 2 Korean green chilies (remove seeds and finely chop)
- 1 Red chili (remove seeds and finely chop)
- 1 Tbsp Perilla oil (Deulgireum)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 2 Tbsp Soy sauce
- 1 Tbsp Cooking wine (Cheongju)
- 1/2 tsp Ginger powder
- A pinch of Black pepper
Yuzu Glaze Sauce- 2 Tbsp Yuzu marmalade/jam
- 6 Tbsp Soy sauce
- 2 Tbsp Sugar
- 3 Tbsp Lemon juice
- 2 Tbsp Cooking wine (Mirin)
- 2 Korean green chilies (remove seeds and finely chop)
- 1 Red chili (remove seeds and finely chop)
- 1 Tbsp Perilla oil (Deulgireum)
Cooking Instructions
Step 1
Pat the 600g of pork neck dry with paper towels to remove any excess blood. Thoroughly draining the blood is key to a clean and delicious flavor, free from any gamey taste.

Prepare the marinade ingredients. Cut the pork neck into bite-sized pieces, about 1.5-2cm thick. Add 1 Tbsp of sugar to the pork. Gently mix to help tenderize the meat; sugar works wonders in softening the pork.

Next, add 1 Tbsp of minced garlic for a fragrant aroma.

Add 2 Tbsp of soy sauce to provide a savory depth of flavor.
