  • 80g Pasta (e.g., Spaghetti, Fettuccine)
  • 2-3 slices Bacon
  • 1/4 Onion
  • 1 tsp Minced Garlic

Sauce Ingredients

  • Heavy Cream (or Whipping Cream) – generous amount
  • Milk – generous amount
  • 1 tsp Sugar (adjust to taste)

First, prepare your ingredients by chopping them into bite-sized pieces. Cut the bacon into strips about 1 cm wide, and finely chop the onion. Have your minced garlic ready.

Bring a large pot of water to a rolling boil. Once boiling, add salt and a splash of olive oil. If you have a bay leaf, toss it in for extra aroma (this is optional). Add your pasta and cook for only about 3 minutes! (You can skip the bay leaf if you don’t have one.) Reserve some of the pasta water before draining.

Heat a pan over medium heat with a little olive oil. Add the prepared bacon, onion, and minced garlic. Sauté until they turn golden brown and slightly crispy. Make sure to render out enough fat from the bacon.

Once the bacon and onions are nicely browned, pour in your heavy cream (or whipping cream) and milk. Let it simmer gently until the sauce thickens slightly. Add the drained pasta to the pan and toss well to coat it with the sauce. Finally, sprinkle in the sugar (about 1 teaspoon) and toss again to help the sauce adhere to the pasta. Be cautious with the sugar; too much can make it overly sweet, so tasting and adjusting is recommended.

Your delicious cream pasta is ready! Transfer it to a serving plate. A little bit of garnish will make it look even more appealing.

To finish, arrange a small handful of baby greens on top of the pasta. Grate some Grana Padano cheese over it, and drizzle with cream balsamic sauce. This simple touch elevates your homemade pasta to look and taste as good as, if not better than, restaurant-quality dishes!
