Ingredients

  • 1 bunch chives (approx. 50g)
  • 2 sticks pollock roe sausage (approx. 10cm length each)
  • 1/4 onion (small)
  • 1 egg
  • Pinch of salt (approx. 1g)
  • 1 Tbsp potato starch (15g)

Cooking Instructions

First, thoroughly wash the fresh chives under running water to remove any dirt or debris. Trim off the tough bottom ends and pat them dry. Finely chop the chives into approximately 1cm lengths. The key is to preserve their fragrant aroma!

Cut the pollock roe sausage sticks into 4 equal pieces lengthwise. Then, gently shred them into smaller, bite-sized pieces following the natural grain. Avoid shredding them too finely; leaving some texture will enhance the chewiness of the pancake.

Peel and wash the 1/4 onion, then thinly slice it into fine slivers. Slicing them thinly ensures they cook quickly and evenly, adding a pleasant sweetness to the pancake without overwhelming the other flavors.

Now, let’s make the batter. In a large bowl, combine the chopped chives, shredded pollock roe sausage, and thinly sliced onion. Crack in 1 egg, add a pinch of salt to season, and 1 tablespoon of potato starch for a nice crispiness. Mix everything together thoroughly with chopsticks or a spatula until well combined. Be careful not to overmix, as the chives might release too much water.

Heat a pan over medium heat and add a generous amount of cooking oil. Spoon the batter onto the hot pan, forming small, round pancakes. Cook over medium-low heat to ensure they cook through without burning. Once the bottom is golden brown and crispy, carefully flip them over and cook the other side until golden brown as well. When both sides are beautifully golden, your delicious chive and pollock roe sausage pancakes are ready! Enjoy them while they’re warm.
