Traditionally celebrated during holidays, Ogone-bap is a nutritious and hearty dish. This recipe makes it easier than ever, perfect for busy modern families. Using a pressure cooker, you can significantly reduce cooking time while infusing the rice with a delightful blend of grains, beans, and chestnuts. Enjoy a wholesome and satisfying meal!

Main Ingredients

  • 1.5 cups glutinous rice (approx. 270g)
  • 1 cup non-glutinous rice (approx. 180g)
  • 1 cup mixed grains (approx. 180g)
  • 1/2 cup black beans (approx. 90g)
  • 1/2 cup white beans (approx. 90g)
  • 1/2 cup red beans (adzuki beans) (approx. 90g)
  • 1 cup peeled chestnuts (approx. 150g)

Seasoning & Others

  • 1 tsp salt
  • 2-3 paper cups of water (including water from boiling red beans)

Cooking Instructions

Step 1

First, prepare 1.5 cups of glutinous rice and 1 cup of non-glutinous rice. Rinse the rice 3-4 times under running water until the water runs clear, then soak it in cool water for 30 minutes. Soaking the rice makes it softer and tastier.

For a simplified process, we’re using 1 cup of mixed grains. Rinse the mixed grains just like the rice, and soak them in water for 30 minutes to 1 hour. The soaking time may vary depending on the type of grains.

Prepare 1/2 cup each of black beans and white beans. It’s important to soak the beans sufficiently so they cook tenderly. Soak them in water for at least 1 hour, or longer if possible. Soaked beans cook more evenly and are easier to digest.

Wash the peeled chestnuts thoroughly. Briefly soaking the chestnuts in water will help them become moister and more delicious when cooked with the rice.

Place 1/2 cup of red beans (adzuki beans) in a pot, add water, and bring to a boil over high heat. Once boiling, discard the first batch of water. This step removes any astringent taste, resulting in a cleaner flavor.

Return the boiled red beans to the pot, add 300ml of fresh water, and boil for 5 minutes over high heat until the beans are partially cooked.

Drain the cooked red beans and set them aside to cool. Do not discard the water used to boil the beans. Add 1 tsp of salt to this ‘red bean water’ to season the rice. This water will impart a subtle color and flavor to the Ogone-bap.

Now, let’s combine all ingredients in the pressure cooker. Add the drained glutinous rice, non-glutinous rice, soaked mixed grains, beans, and chestnuts. Pour in the prepared red bean water and an additional 2-3 cups of water. Ensure the water level covers the ingredients. Place the pressure cooker over high heat to bring to a boil.

Once the pressure cooker’s whistle starts to blow (indicating it’s pressurized), reduce the heat to low and cook for another 5 minutes. Then, turn off the heat completely and let it steam for 5 minutes. After the steaming process, your delicious and perfectly cooked Ogone-bap will be ready to enjoy!
