Cooking Instructions

Step 1

Hello everyone! Today, I’ll share a recipe for stir-fried bellflower root (doraji) that even those who are hesitant about its slight bitterness can enjoy. I’ll provide detailed tips on how to effectively remove the bitterness, making it delicious whether served simply stir-fried or as a component in bibimbap. Shall we get started? First, to remove the bitterness from the bellflower root, soak it in cold water for at least 1 hour. It’s even better if you change the water once or twice during this time.

Step 1

Step 2

After soaking to remove the bitterness, drain the bellflower root slightly. Add a little coarse salt and a little sugar, then gently massage it with your hands. This process will draw out the slightly bitter juices, making the water cloudy. This step further helps to eliminate the bitterness.

Step 2

Step 3

Rinse the massaged bellflower root thoroughly under running water. It’s important to rinse it several times to remove any remaining bitterness and saltiness. Next, blanch the rinsed bellflower root in boiling water for about 30 seconds to 1 minute. Be careful not to over-blanch, as it can become mushy. After this step, the bitterness of the bellflower root will be almost completely removed.

Step 3

Step 4

Drain the blanched bellflower root well. Now, let’s start stir-frying. Heat a pan and add 2 teaspoons of perilla oil. Add the drained bellflower root and stir-fry gently over medium-low heat, ensuring it doesn’t burn. It’s best to sauté until the bellflower root absorbs the oil and becomes tender.

Step 4

Step 5

Once the bellflower root is lightly sautéed, add the thinly julienned red bell pepper and chopped scallions. Stir-fry them together. The vibrant colors and fresh aroma will make the dish look even more appealing. Add 1 teaspoon of minced garlic and sauté to release its fragrance.

Step 5

Step 6

Finally, mix all the ingredients and continue to stir-fry. Season with 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1 teaspoon of toasted sesame seeds. Stir-fry until the bell pepper and scallions are tender and all the seasonings are well combined with the bellflower root. Feel free to adjust the amount of salt and sugar to your preference.

Step 6

Step 7

And there you have it! A delicious stir-fried bellflower root dish with no bitterness is ready! By properly employing the bitterness removal method, you can retain the unique flavor of bellflower root while creating a tender and delightful side dish that everyone will love. Enjoy this simple yet nutritious bellflower root stir-fry!
