  • 1 slice of bread
  • 3 Vienna sausages
  • 1/3 onion
  • Shredded mozzarella cheese, as needed

Seasoning & Condiments

  • Ketchup, as needed

Cooking Instructions

Step 1

Start by preparing your slice of bread. Using a cup or cookie cutter, carefully press down in the center of the bread to create a round hole. This will be where the egg is cooked. Try not to press too hard to avoid tearing the bread. Set the cut-out bread circle aside.

Prepare 1/3 of an onion. Peel and finely dice the onion. Chopping it finely will ensure it cooks quickly and evenly within the toast.

Take your 3 Vienna sausages and slice each one into 3 bite-sized pieces. You can cut them diagonally or into rounds if you prefer.

Melt about 1/2 tablespoon of butter in a non-stick pan over medium-low heat. Swirl the pan to coat the surface evenly as the butter melts. If you don’t have butter, a little cooking oil will also work.

Once the butter is melted and fragrant, place the prepared slice of bread into the pan. Carefully crack an egg directly into the hole you made in the center of the bread. Try not to break the yolk. Allow the egg white to spread naturally within the bread ring.

As the egg white begins to set, add your prepared diced onions and sliced Vienna sausages into the egg within the bread. If using mozzarella cheese, sprinkle it over the top now.

Gently place the circle of bread that you cut out earlier on top of the egg and other ingredients. This acts like a little lid, helping the egg cook through while keeping the toast moist.

Cook for a few minutes until the bottom of the toast is golden brown and the egg is starting to set. Carefully flip the toast using a spatula and cook the other side for another 1-2 minutes until golden and the egg is cooked to your liking. Serve immediately, adding ketchup as desired.
