  • 2 Tbsp finely minced broccoli

  • 1 pinch of salt

Cooking Instructions

Step 1

Begin by finely mincing your broccoli florets after washing them thoroughly. You can even use the stems for added flavor. In a separate bowl, crack the eggs and add a pinch of salt. Whisk them gently with a fork or whisk, ensuring to break up the chalazae (the white stringy bits). Keep the minced broccoli in a separate small bowl. Having all your ingredients prepped makes the cooking process much smoother.

Preheat a non-stick frying pan over medium-low heat and lightly coat it with about 1/2 teaspoon of olive oil. Once the pan is warm, pour in about 3/5 of the whisked egg mixture, spreading it evenly to form a thin layer. As the egg begins to set, sprinkle the minced broccoli evenly over the surface. Gently press down on the broccoli to help it adhere to the egg.

Maintaining a low heat to prevent sticking or burning, use chopsticks or a spatula to gently roll the omelet from the bottom edge towards the opposite side. Start by making a small roll, and then pour in more egg mixture to create a layered, thicker omelet as you continue rolling. Keep the heat low to ensure even cooking.

Push the rolled portion to one side of the pan. Pour the remaining egg mixture into the empty space, making sure to slightly overlap the edge of the already rolled omelet. This helps to seal the layers together. Continue to gently roll the omelet, encasing the new layer of egg and broccoli within the existing roll.

Pour in the last portion of the egg mixture, again ensuring it connects with the existing roll. Continue to cook and roll until the omelet is fully cooked and has a beautiful, even shape. Allow the rolled omelet to cool slightly before slicing it into bite-sized pieces. This will help maintain its shape. Serve warm or chilled.
