Main Ingredients

  • Beef (for braising) 1kg
  • 1 Onion
  • 1 Green onion

Braising Sauce

  • 1 cup Soy sauce (200ml)
  • 1/2 cup Mirin (or soju) (100ml)
  • 10 cloves Garlic
  • 5 Bay leaves
  • 20 Black peppercorns
  • 1/2 cup Oligosaccharide (100ml)
  • 2 Dried chili peppers
  • 5 Tbsp Tuna extract (or fish sauce)

Cooking Instructions

First, thoroughly remove the blood from the beef using paper towels. Properly draining the blood is essential for a clean-tasting braised beef without any gamey odor. It’s best to let it drain for at least 30 minutes.

Rinse the beef lightly under running water to remove any remaining blood. Cut the beef into manageable pieces for easier cooking.

Now, it’s time to boil the beef. In a pot, add cold water along with the beef pieces, 1 green onion, garlic cloves, bay leaves, black peppercorns, and mirin (or soju). Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for about 30 minutes until the beef is tender. Remove the cooked beef, let it cool slightly, then shred it following the grain of the meat. Shredding it this way allows the sauce to penetrate better and results in a softer texture.

In a wide pot or pan, combine the shredded beef with dried chili peppers, the remaining green onion, garlic cloves, black peppercorns, bay leaves, oligosaccharide, soy sauce, remaining mirin, and tuna extract. Stir everything together. Then, over medium-low heat, braise for about 20-30 minutes until the sauce thickens and becomes glossy. Taste and adjust the seasoning as needed. Slow simmering ensures the flavors deeply infuse into the meat, creating a more delicious braised beef.
