How to Make Gochujang Pork Belly Stir-fry with Thinly Sliced Pork Belly
Suddenly craving ssam밥 (lettuce wraps with rice and meat), I rummaged through my fridge to see what ingredients I had for Jeyuk Bokkeum (spicy stir-fried pork). Lo and behold, I found my staple: thinly sliced pork belly!
Main Ingredients- Thinly sliced pork belly, 3-4 handfuls (approx. 300-400g)
- 1/2 onion
Cooking Instructions
Step 1
First, let’s make the essential gochujang sauce for our Jeyuk Bokkeum! In a bowl, combine 1.5 Tbsp gochujang, 1.5 Tbsp soy sauce, 0.5 Tbsp sugar, 0.5 Tbsp oligosaccharide, 1 Tbsp minced garlic, and 1 Tbsp sesame oil. Stir well until all the seasonings are evenly mixed. The sugar and oligosaccharide will add sweetness and a beautiful glaze.
Step 2
Add the thinly sliced pork belly to the prepared sauce and gently mix it by hand. Don’t worry if the slices are still somewhat rolled up; just ensure the marinade coats the meat evenly. There’s no need to meticulously unroll each piece.
Step 3
Next, thinly slice half an onion and add it to the marinated pork belly. Toss everything together lightly to combine. The onion will soften and release its sweetness as it cooks, adding another layer of flavor.
Step 4
Now, place the marinated pork belly and onions into a heated pan. Cook without adding any extra oil; the fat from the pork belly will render and be sufficient for stir-frying.
Step 5
Stir-fry over medium heat until the pork is cooked through. Allowing the pork to get slightly crispy in parts will impart a delicious smoky flavor. Continue cooking until the onions are translucent and the pork is nicely browned. Finish with a sprinkle of sesame seeds for a final touch of aroma and texture.
