Introducing a napa cabbage stir-fry with a delightful crisp texture and mild, savory flavor. You can quickly whip up a wonderful side dish using leftover vegetables from your fridge. It’s perfect as a side for rice, or simply enjoy a healthy meal by stir-frying it.
Main Ingredients- Napa cabbage 100g (about 2-3 large leaves)
- Onion 1/2 medium
- Shiitake mushroom 1 (fresh or dried)
- Scallion (green onion) 1/2 stalk (focus on the white part)
Cooking Instructions
Step 1
Wash the fresh napa cabbage thoroughly under running water. Ensure all dirt and debris are removed. Pat it dry completely with paper towels or a clean cloth. This step is crucial to prevent excess water from making the stir-fry soggy and to maintain its crispness. Cut the cabbage into bite-sized pieces, about 3-4 cm in length.
Step 2
Peel and wash the onion, then slice it thinly into long strips about 0.5 cm thick. If using fresh shiitake mushrooms, remove the stems and slice them thinly. If using dried shiitake mushrooms, rehydrate them in lukewarm water beforehand. Finely chop the white parts of the scallions. The onion and scallion will add a wonderful aroma and depth of flavor to the cabbage.
Step 3
Heat a frying pan over medium heat and add 2 tablespoons of sesame oil. Once the oil is hot, add the prepared napa cabbage and stir-fry quickly for about 1-2 minutes. The goal is to lightly cook the cabbage so it retains its crispness. You’ll notice it becoming slightly translucent as it wilts.
Step 4
Once the cabbage has wilted slightly, add the sliced onions to the pan and continue to stir-fry with the cabbage. As the onions begin to turn translucent, pour 1 tablespoon of soy sauce around the edges of the pan. Allowing the soy sauce to sizzle slightly will enhance its savory notes.
Step 5
Now, add the sliced shiitake mushrooms and chopped scallions to the pan. Sprinkle in 2 tablespoons of gochugaru (Korean chili flakes). Stir everything together evenly until all the ingredients are well combined and glossy. The dish is ready when the spicy aroma of the chili flakes is released. Taste and adjust seasoning with salt or pepper if needed. This makes a fantastic side dish to serve with warm rice!
