Octopus and Seaweed Soup
Super Easy and Nutritious Octopus Seaweed Soup Recipe (feat. Naju Gomtang Broth)
Using fresh octopus caught during a recent sea foraging trip and ready-made Naju Gomtang broth, I made this rich and clean-tasting octopus seaweed soup. It’s perfect as a nourishing meal and incredibly simple to prepare. The combination of land and sea is always delicious! This soup features seaweed, a marine vegetable, and tender octopus. Instead of a heavy bone broth, I opted for the clean and flavorful Naju Gomtang broth, which complements the octopus beautifully. Thanks to the flavorful broth, you won’t need any extra seasoning.
Ingredients- 10g dried seaweed
- 1 pack Naju Gomtang broth
- 2 cleaned octopuses
- 2 Tbsp sesame oil
- 1 Tbsp minced garlic
- 450ml water
- 1/2 tsp white pepper powder
Cooking Instructions
Step 1
First, rehydrate the 10g of dried seaweed in water until soft, then cut it into bite-sized pieces. Heat a pot over medium-low heat, add 2 Tbsp of sesame oil, and sauté the rehydrated seaweed. Stir-fry until the water evaporates and it becomes fragrant.
Step 2
Once the seaweed is well sautéed, add 1 Tbsp of minced garlic and stir-fry until the garlic is fragrant. Be careful not to burn the garlic by adjusting the heat.
Step 3
Now, open the pack of Naju Gomtang broth and pour it into the pot gradually. Once the soup begins to simmer, reduce the heat to low.
Step 4
After adding the broth, cover the pot with a lid and let it simmer for a while. Allow the broth and seaweed to meld together as it simmers gently.
Step 5
Add an additional 450ml of water. You can adjust the amount of water to achieve your desired soup consistency. The Naju Gomtang broth is already seasoned, so no additional soy sauce or salt is typically needed. Taste the soup and add a tiny pinch of salt or soy sauce if you prefer it saltier.
Step 6
Add 1/2 tsp of white pepper powder to enhance the flavor of the soup. White pepper has a less intense spiciness and a more pleasant aroma compared to black pepper.
Step 7
Add the 2 cleaned octopuses whole into the pot. We’ll cook them until they are tender.
Step 8
As soon as the octopus turns red and plumps up, turn off the heat immediately. Overcooking octopus can make it tough, so once it’s cooked, turn off the heat and cut the octopus into bite-sized pieces (about 2-3 cm) directly in the pot. Be careful as it will be hot! Your delicious octopus seaweed soup is now ready!
