I always felt something was missing when I made soy sauce bibim guksu, but ever since I learned Park Mak-rye Grandma’s recipe, this is my go-to. It’s simple yet incredibly flavorful!

Main Ingredients

  • Noodles for Bibim Guksu, 1 serving
  • 1/3 Korean zucchini (aehobak)
  • 1/3 Carrot

Golden Ratio Soy Sauce Dressing

  • 3 Tbsp Soy Sauce
  • 1.5 Tbsp Vinegar (rice vinegar or apple cider vinegar)
  • 3 Tbsp Sugar
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, gather all the ingredients needed to make the soy sauce bibim guksu. You only need fresh vegetables and basic seasonings.

Wash 1/3 of a carrot, trim the ends, and julienne it as thinly as possible. The thinner the strips, the better the texture when cooked.

Wash 1/3 of a Korean zucchini, trim both ends, and julienne it thinly, just like the carrot. You can remove the seedy core or slice it very thinly.

Bring a large pot of water to a rolling boil. Add 1 serving of noodles and cook. Once the water comes to a boil after adding the noodles, add 1 cup of cold water. This is the secret to making the noodles chewier and bouncier!

When the noodles boil up again, add another cup of cold water, along with the julienned carrots and zucchini that you prepared earlier. Cooking the vegetables along with the noodles means you don’t have to sauté them separately, which saves time and effort.

Once the noodles and vegetables are cooked, drain them thoroughly in a colander. Rinsing the noodles under cold water while they are still hot makes them even more delightfully chewy. After draining, combine the noodles with all the prepared dressing ingredients and mix gently. Combine 3 Tbsp soy sauce, 3 Tbsp sugar, 1.5 Tbsp vinegar, 2 Tbsp sesame oil, 1 Tbsp minced garlic, and 1 Tbsp toasted sesame seeds. Mix everything well. Feel free to adjust the sweetness or tanginess to your preference.
