While soft tofu (sundubu) has a higher water content and is less nutrient-dense per unit compared to firm tofu, its incredibly smooth texture and pure bean flavor make it a favorite for many. Today, I’m thrilled to share an incredibly simple recipe for a 5-minute soft tofu stew that you can whip up in no time!
Essential Ingredients- 1 package soft tofu (sundubu, approx. 190-210g)
- 1 packet store-bought soft tofu stew seasoning (includes chili oil)
- 1 cup water (200ml)
Cooking Instructions
Step 1
Carefully open the package of soft tofu and cut it in half. Place the tofu halves in a sieve to drain any excess water for a moment. Avoid draining for too long, as the tofu might break apart.
Step 2
We’ll be using a convenient pre-made soft tofu stew seasoning packet. These often include chili oil, which adds a wonderful depth of flavor without needing extra ingredients. (If your seasoning packet is basic, you can mix 1 Tbsp chili oil, 1/2 Tbsp soy sauce, 1/2 Tbsp minced garlic, and a pinch of salt).
Step 3
Prepare your optional ingredients. Slice the onion thinly. Trim the tough ends off the oyster mushrooms and gently pull them apart into bite-sized pieces. Chop the green onion. It’s best to wipe the mushrooms clean with a damp cloth rather than washing them, as washing can dilute their flavor.
Step 4
Finally, separate the egg yolk from the white. Gently scoop out the yolk with a spoon and set it aside. This will be added towards the end of cooking.
Step 5
This stew is best enjoyed piping hot, so a traditional Korean earthenware pot (ttukbaegi) is recommended! Pour 1 cup (200ml) of water into the pot. Add the soft tofu stew seasoning packet and stir well to combine. Next, add the sliced onions and the drained soft tofu.
Step 6
Using a spoon, gently break the soft tofu into 2-3 large pieces within the pot. Once the stew begins to boil, add the oyster mushrooms and green onions. Let it simmer vigorously over high heat for about 3 minutes. Lastly, carefully spoon the reserved egg yolk into the center of the stew and let it cook for another 2 minutes. Voilà! A delicious, piping hot soft tofu stew is ready in just about 5 minutes. Enjoy your quick and flavorful meal!
