Ingredients

  • 3 large eggs
  • Pinch of salt
  • 2 sticks imitation crab meat (surimi)
  • 1 tsp sesame oil
  • 1 tbsp cooking oil

Cooking Instructions

In a mixing bowl, crack the 3 eggs. Add the sesame oil for a fragrant aroma and a pinch of salt to season. Whisk everything together thoroughly until the yolks and whites are well combined and the mixture is smooth. Ensuring the egg mixture is lump-free will result in a tender and beautifully rolled egg dish.

Heat a non-stick frying pan over medium-low heat. Add the cooking oil and swirl to coat the entire surface of the pan. Pour about half of the beaten egg mixture into the pan. Tilt the pan so the egg mixture flows to one side, allowing the bottom to cook partially. Once the bottom begins to set, gently shake the pan to allow the uncooked egg to flow into any gaps. Wait until about 70% of the egg layer is cooked but still slightly moist on top.

When the egg layer is about 70% cooked, lay the 2 sticks of imitation crab meat along the edge of the cooked egg. Carefully begin to roll the cooked egg over the imitation crab meat, creating layers. Continue rolling the egg towards the opposite side of the pan. If the pan is large, you might need to add a little more oil and pour in the remaining egg mixture around the rolled portion, cooking it before continuing to roll. Once fully rolled, gently press the roll with a spatula and cook for another 1-2 minutes, turning occasionally, to ensure it’s cooked through.

Once the egg roll is cooked, remove it from the pan and let it cool slightly on a cutting board. This makes it easier to slice. Using a sharp knife, cut the roll into bite-sized pieces, about 1.5 to 2 cm thick. For cleaner cuts, you can dampen the knife blade with water or wipe it with a damp cloth between slices. Arrange the beautifully sliced imitation crab egg rolls on a plate. Enjoy immediately while warm for the best texture!
