Ingredients

  • 1 handful of fernbrake namul
  • 1 handful of seasoned soybean sprout namul
  • 1/2 handful of balloon flower root namul
  • 1 handful of napa cabbage namul
  • 1 handful of stir-fried oyster mushroom namul
  • 1 handful of eggplant namul
  • 1 handful of stir-fried sweet potato stem namul
  • 3 servings of cooked rice
  • Seaweed flakes, to taste
  • 1 Tbsp sesame seeds
  • 2 Tbsp toasted sesame seeds (ground)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare the leftover namul dishes from your holiday feasts. Any kind of namul will work, such as fernbrake, soybean sprouts, balloon flower root, napa cabbage, mushrooms, eggplant, or sweet potato stems. If the namul pieces are too long or large, roughly chop them into bite-sized pieces.

Heat a wide pan over medium-low heat. Add all the prepared namul and stir-fry lightly. To preserve the original flavors of the namul, avoid overcooking; just stir-fry until they are slightly softened. If the namul is already seasoned, you likely won’t need to add extra salt.

After stir-frying the namul briefly, push them to one side of the pan. Add the 3 servings of warm cooked rice to the empty space. Stir-fry the rice directly in the pan until it becomes slightly loose and fluffy.

Mix the stir-fried namul and rice together using a spatula, gently combining them. Continue to stir-fry until the namul and rice are well incorporated. This step is crucial for developing a rich flavor profile. Ensure the rice grains are separated as you stir-fry.

Once the rice and namul are thoroughly mixed and look appetizing, reduce the heat to low. Drizzle in 2 Tbsp of ground toasted sesame seeds for a nutty aroma and 1 Tbsp of sesame oil for added richness. Stir briefly to combine these final flavorings.
