  • Inarizushi kit, 1 serving (includes seasoned sushi rice)
  • 2 sheets of roasted seaweed (gim)
  • A pinch of black sesame seeds
  • 1 egg

Hello everyone! Today, we’re going to make adorable inarizushi resembling the popular character, Pengsoo. It’s perfect as a fun lunchbox topping that kids will absolutely adore. Surprise your loved ones with ‘Pengsoo Inarizushi’!

First, let’s prepare the egg. Carefully separate the egg white and yolk. Then, thinly pan-fry each into an omelet. Use the egg white to cut out round shapes for Pengsoo’s eyes, and the egg yolk to create the distinctive mouth shape. For Pengsoo’s black hair and cheerful smile, we’ll use the roasted seaweed. You can cut the seaweed into thin strips with scissors beforehand.

Now, it’s time to assemble the inarizushi. Prepare the sushi rice according to your inarizushi kit’s instructions and fill the seasoned fried tofu pouches. It’s even better if you can shape the rice into a slightly round form, keeping Pengsoo’s face in mind. Gently press the bottom of the inarizushi to create a stable base, so it stands upright nicely on a plate.

Once your inarizushi are assembled, carefully attach the Pengsoo eyes (egg white omelet pieces) and mouth (egg yolk omelet pieces). Use the black seaweed to delicately create the hair and a smiling mouth. Finally, use a tiny bit of black sesame seeds to form the pupils and nostrils, completing Pengsoo’s face! I do wish I had made Pengsoo’s signature yellow headset with the egg yolk omelet for an even closer resemblance, but that’s a small regret. I’ll have to try that next time!

Ta-da! And just like that, our cute and charming Pengsoo character inarizushi is complete! It’s absolutely perfect for kids’ lunchboxes or as a delightful snack. Enjoy your time with these ‘Pengsoo Inarizushi’ that greet you with a ‘Peng-ha!’
