This is a special Jeon-jjigae recipe that utilizes leftover codfish pancakes (dongtae-jeon) and tofu pancakes (dubu-buchim), along with Spam and sausages, creating a rich flavor profile similar to Budae-jjigae (army stew). We add chopped spicy green chilies for a robust kick, making it the perfect dish to conclude your holiday feast with a delicious and slightly spicy note.

  • 3 sheets of Pan-fried Tofu (Dubu-buchim)
  • 100g Spam
  • 60g Sausage
  • 1 cup Kimchi (aged and fermented)

Cooking Instructions

First, prepare the codfish pancakes and pan-fried tofu by cutting them into bite-sized pieces. Cut the codfish pancakes slightly larger than bite-sized, and the tofu into similar dimensions to the codfish pancakes for a visually appealing and easy-to-eat stew.

Next, arrange the cut codfish pancakes and pan-fried tofu nicely in a pot. Presenting the ingredients attractively will make the stew look more appetizing when cooked.

Slice the 100g of Spam into similar thickness as the tofu, and diagonally slice one sausage. Add them to the pot along with the other ingredients. Using a variety of processed meats will enhance the richness of the stew.

Add 1 cup of aged kimchi, cut into bite-sized pieces, to the center of the pot. The tangy flavor of the kimchi will add depth to the stew’s broth.

Now it’s time to add the seasonings. Sprinkle 1 Tbsp of gochugaru and 1/2 Tbsp of minced garlic over the kimchi, ensuring they are evenly distributed.

Pour 2.5 cups (approximately 500ml) of the prepared anchovy-kelp broth into the pot. Make sure the broth sufficiently covers the ingredients so that the flavors can meld properly during cooking.

Place the pot on the stove over high heat and bring to a boil. Once the broth is bubbling vigorously, reduce the heat to medium-low and let it simmer gently, allowing the ingredients to meld together. This process concentrates the flavors as the broth reduces.

Finally, add the diagonally sliced 1 stalk of scallion and 2 Korean green chilies. Sprinkle a pinch of black pepper for added aroma. Continue to simmer until all ingredients are cooked through and the broth has slightly thickened, completing your flavorful and spicy Jeon-jjigae. Feel free to add mushrooms or extra tofu according to your preference.
