Noodle Dough- 400g All-purpose flour
- 50g Fresh spinach (about 2 bunches of Pogang spinach)
- 1 Egg
- 1/2 Onion
- 1/2 Carrot
- 1 tsp Salt
- 1 Tbsp Sesame oil
Seasoning Sauce- 6 Tbsp Soy sauce
- 2 Red chilies
- 1 tsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 20g Grated pear or pear juice
- 1 tsp Vinegar
Broth and Toppings- 200g Chicken breast (for broth and topping)
- 5 pieces Dried kelp (approx. 10x10cm)
- 1 Tbsp Garlic cloves
- 1 Green onion (white part mostly)
- Pinch of salt (for chicken seasoning)
- Pinch of pepper (for chicken seasoning)
- 6 Tbsp Soy sauce
- 2 Red chilies
- 1 tsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 20g Grated pear or pear juice
- 1 tsp Vinegar
Broth and Toppings- 200g Chicken breast (for broth and topping)
- 5 pieces Dried kelp (approx. 10x10cm)
- 1 Tbsp Garlic cloves
- 1 Green onion (white part mostly)
- Pinch of salt (for chicken seasoning)
- Pinch of pepper (for chicken seasoning)
Cooking Instructions
Step 1
Begin by preparing all your ingredients. Wash the onion and carrot thoroughly, peel them, and then thinly slice them into julienne strips. Set them aside. Finely chop the red chilies and green onion for the seasoning sauce and broth. Rinse the chicken breast.
Step 2
Let’s make the spinach noodle dough! In a blender or food processor, combine the washed spinach, all-purpose flour, 1 egg, and 1 tablespoon of sesame oil. Blend until you achieve a smooth, vibrant green dough. Ensure there are no spinach lumps remaining.
Step 3
Now, let’s simmer the rich chicken broth. In a pot, add the chicken breast, dried kelp pieces, whole garlic cloves, and the green onion. Bring to a boil and simmer until the chicken breast is fully cooked. Carefully remove the cooked chicken breast, let it cool slightly, then shred it into bite-sized pieces. Season the shredded chicken lightly with salt and pepper; this will be your delicious topping. Strain the broth through a sieve for a clear, clean soup base.
Step 4
Add 1 teaspoon of salt to the spinach dough and knead it well until it becomes smooth and elastic. Kneading for about 5-10 minutes will result in a chewier noodle texture. Lightly dust your work surface with flour and roll out the dough into a thin, wide sheet.
Step 5
To prevent the dough from sticking and to ensure thin noodles, dust both sides of the dough generously with flour as you continue to roll it out. Roll it to your desired thickness. It’s important to find a balance: too thick and it will take longer to cook, too thin and it might tear.
Step 6
Carefully fold the thinly rolled dough, dusting with flour between folds to prevent sticking. Using a sharp knife, cut the folded dough into noodles approximately 5mm thick. Gently toss the freshly cut noodles with a bit more flour to keep them separated.
Step 7
Bring the prepared clear chicken broth back to a rolling boil. Add the julienned onion and carrot, along with the minced garlic, and cook until the vegetables are tender. Once the vegetables are cooked, add the freshly cut kalguksu noodles. Cook until the noodles are fully done and float to the surface. Ladle the noodles and broth into serving bowls. Generously top with the shredded chicken prepared earlier.

Finally, prepare the flavorful seasoning sauce. In a small bowl, combine 6 tablespoons of soy sauce, finely chopped red chilies, 1 teaspoon of minced garlic, 1 tablespoon of sesame oil, 1 tablespoon of toasted sesame seeds, 20g of grated pear or pear juice, and 1 teaspoon of vinegar.
