  • 100g Cabbage (thinly shredded)
  • 1 Cucumber (seeds removed, thinly shredded)
  • 6 Cherry Tomatoes (halved or lightly mashed)
  • 1 Red Chili (or green chili, seeds removed and finely minced or mashed)
  • 3 cloves Garlic (finely minced or mashed)

Dressing Ingredients

  • 2 Tbsp Fish Sauce (adds umami depth)
  • 2 Tbsp Lemon Juice (for fresh tanginess; lime juice or vinegar can be substituted)
  • 1.5-2 Tbsp Sugar (adjust to your preference)

Cooking Instructions

First, wash the cucumber thoroughly. Trim off the seedy core and thinly shred the remaining flesh. Place the shredded cucumber in a bowl, sprinkle with 2-3 pinches of salt, and let it sit for 5 minutes to draw out excess moisture. This step ensures the cucumber stays wonderfully crisp.

In a separate bowl, add the thinly shredded cabbage. Halve the cherry tomatoes or lightly mash them. Finely mince or mash the garlic and the red chili (or green chili). Now, prepare the dressing: combine 2 Tbsp of fish sauce, 2 Tbsp of lemon juice, and 1.5 Tbsp of sugar in a small bowl. Whisk everything together until the sugar is dissolved, creating a well-balanced dressing.

Squeeze out any excess water from the salted cucumber, then add it to the bowl with the shredded cabbage. Pour the prepared dressing over the vegetables. Gently toss and mix everything together with your hands, ensuring all ingredients are evenly coated with the dressing. For the best flavor, let the Som Tum chill in the refrigerator for at least 30 minutes before serving. Taste and adjust the sugar as needed to achieve your desired balance of sweet and tangy flavors.
