Main Ingredients- 2 apples
Seasoning Ingredients- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp fish sauce
- 2 Tbsp minced green onion
- 1/2 Tbsp plum syrup (or honey)
- 1/2 Tbsp sugar
- 1/2 Tbsp minced garlic
- 1/4 Tbsp salted shrimp (minced)
- 1 Tbsp toasted sesame seeds
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp fish sauce
- 2 Tbsp minced green onion
- 1/2 Tbsp plum syrup (or honey)
- 1/2 Tbsp sugar
- 1/2 Tbsp minced garlic
- 1/4 Tbsp salted shrimp (minced)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Begin by thoroughly washing the 2 fresh apples under running water. Since we’ll be using the skin, ensure they are impeccably clean.
Step 2
Next, trim off the stem and blossom end of the washed apples. Core the apples and then cut them into bite-sized cubes, about 1.5 cm (or roughly 0.6 inches) in size, similar to traditional kkakdugi.
Step 3
In a large bowl, combine the cubed apples with all the seasoning ingredients: gochugaru (1.5 Tbsp), fish sauce (1.5 Tbsp), minced green onion (2 Tbsp), plum syrup (1/2 Tbsp), sugar (1/2 Tbsp), minced garlic (1/2 Tbsp), minced salted shrimp (1/4 Tbsp), and toasted sesame seeds (1 Tbsp). Gently toss everything together until the apples are evenly coated with the seasonings. Your crisp and flavorful apple kkakdugi is ready! You can enjoy it immediately, or chill it in the refrigerator for a while to allow the flavors to meld beautifully.
