Main Ingredients

  • 1 head Bok Choy (select fresh, vibrant green leaves)
  • 1 handful Shrimp (thawed if frozen)
  • 1/5 stalk Green Onion (use the white part, avoiding the thickest sections)

Seasoning and Others

  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Minced Garlic
  • 1/2 Tbsp Anchovy Sauce (or Fish Sauce)
  • 1/2 Tbsp Soy Sauce
  • 1/2 Tbsp Flour (can substitute with cornstarch for thickening)
  • 1/2 Tbsp Sesame Oil
  • 3 thin slices Fresh Ginger

Cooking Instructions

Step 1

First, prepare the bok choy. Separate the leaves and wash them thoroughly under running water. Drain well. If using frozen shrimp, thaw them completely in cold water, then rinse gently and drain.

Heat a little cooking oil in a wide pan or wok over medium heat. Add the prepared bok choy leaves and thawed shrimp. Now, add all the seasoning ingredients: 1/2 Tbsp sugar, 1/2 Tbsp minced garlic, 3 thin slices of ginger, 1/2 Tbsp anchovy sauce, 1/2 Tbsp soy sauce, and 1/2 Tbsp flour for thickening. Toss everything together to coat the ingredients evenly. Mixing the seasonings in at this stage helps them to meld beautifully with the ingredients.

Increase the heat to medium-high. Add the sliced green onion and stir-fry everything together until well combined. Continue to stir-fry until the bok choy is tender-crisp and the shrimp have turned pink and are cooked through. Be careful not to overcook, as the bok choy will lose its crispness. Once everything is cooked, turn off the heat. Finally, drizzle with 1/2 Tbsp sesame oil and toss gently to finish. Your delicious shrimp and bok choy stir-fry is ready!
