Now, let’s prepare the rice and glass noodles. If you’re using leftover rice, make sure it’s thawed or warmed up. Soaking the glass noodles beforehand will significantly reduce cooking time and give them a delightful chewy texture. If you’ve frozen soaked glass noodles, a brief period at room temperature will thaw them quickly.

For a rich and savory broth, use soup stock cubes. Prepare 2 cubes for this recipe.

In a pot, combine the chopped kimchi, rice, 4 cups of water (enough for 2 soup stock cubes), and the prepared glass noodles. Bring to a boil over high heat.
