Rice Burger Ingredients

  • 400g Cooked Rice (approx. 2 bowls), warm
  • 2 Tbsp Mayonnaise
  • 3 Tbsp Dried Seaweed Flakes (Gim)
  • 1 Tbsp Toasted Sesame Seeds
  • A little extra Gim for garnish (optional)

Cooking Instructions

Step 1

First, drain the canned tuna by placing it in a sieve or pressing it with paper towels to remove as much oil as possible. Less oil will result in a cleaner, less greasy rice burger.

Step 1

Step 2

Rinse the ripe kimchi under cold water briefly to adjust its spiciness. Squeeze out the excess water thoroughly, then finely chop it. The finer it’s chopped, the better it will integrate with the rice.

Step 2

Step 3

In a small bowl, combine the finely chopped kimchi with 1 tablespoon of sugar. This balances the sourness and enhances the overall flavor, making the kimchi taste sweeter and more savory.

Step 3

Step 4

Add the drained canned tuna to the kimchi. Drizzle in 1 tablespoon of sesame oil to add a nutty aroma and richness to the filling.

Step 4

Step 5

Mix everything together thoroughly until well combined. This creates your delicious Kimchi Tuna filling. You can let it sit for a few minutes for the flavors to meld.

Step 5

Step 6

Place 400g of warm cooked rice into a large bowl. Slightly moist or sticky rice works best for forming rice burgers.

Step 6

Step 7

Drizzle 2 tablespoons of mayonnaise over the warm rice. This adds a creamy texture and a subtle richness that makes the rice more palatable.

Step 7

Step 8

Sprinkle 1 tablespoon of toasted sesame seeds over the rice for added nutty flavor and texture.

Step 8

Step 9

Generously add 3 tablespoons of dried seaweed flakes (gim) to the rice. Gently mix it with the rice using a spatula or spoon until well combined. Don’t be shy with the seaweed flakes – they are key to the characteristic flavor of a rice burger.

Step 9

Step 10

Your rice mixture and Kimchi Tuna filling are now ready. They look appetizing, don’t they?

Step 10

Step 11

To form the burger, take a small bowl or cup. Fill it about halfway with the seasoned rice. Avoid overfilling, as it might make it difficult to enclose the filling properly.

Step 11

Step 12

Spoon a generous amount of the Kimchi Tuna filling onto the layer of rice. Ensure the filling is slightly less in volume than the rice to help create a neat, compact burger shape.

Step 12

Step 13

Top the filling with the remaining seasoned rice. Gently press down on the top layer of rice with your hand to compact the burger. Carefully invert the bowl to unmold the rice burger. Press it firmly again to secure the shape. You’ll have a perfectly formed, delicious Kimchi Tuna Rice Burger! For an extra touch, sprinkle a little more seaweed flakes on top before serving.
