  • 6 cups (approx. 1200ml) rice water
  • 1 stalk green onion (scallion)
  • A little spicy chili pepper (e.g., Cheongyang chili or red chili), optional

Seasoning

  • 2 Tbsp Doenjang (Korean soybean paste) (or 2 Tbsp store-bought Doenjang)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp anchovy sauce (or substitute with soy sauce for soup, or salt)

Cooking Instructions

First, pour 6 cups (about 1200ml) of rice water into a generous pot and start boiling over high heat. The unique savory flavor of rice water will add depth to the soup. Wait until the rice water comes to a rolling boil.

Once the rice water starts boiling, add 2 Tbsp of Doenjang and 1 Tbsp of Gochujang to the pot. Whisk gently with a whisk or spoon to dissolve them completely into the water, ensuring no lumps remain. This step builds the flavor base of the soup.

Wash the fresh spinach thoroughly, then cut it into bite-sized pieces (about 4-5 cm long). Add all the prepared spinach to the boiling Doenjang broth. Cooking the spinach briefly helps maintain its vibrant color and pleasant texture.

Add 1 Tbsp of minced garlic to the soup and mix well. The pungent aroma of garlic will blend with the Doenjang to create a richer flavor.

When the spinach has slightly wilted and the soup begins to re-boil, add 1 stalk of green onion, sliced diagonally. The refreshing taste of the green onion will add umami to the broth.

Give it a quick stir, and as soon as the soup comes to a brief boil again, turn off the heat immediately. Overcooking the spinach will make it mushy, so it’s crucial to turn off the heat once it re-boils. This ensures tender spinach.
