Start by preparing 7 fresh mandarin oranges. To ensure they are thoroughly clean, wash them under running water. You can use baking soda or coarse salt to gently scrub the peels and remove any wax or impurities. Rinse them well multiple times.

Carefully peel the washed mandarin oranges. It’s best to remove not only the outer peel but also the white pith underneath, as this can contribute to a bitter taste in the marmalade. Separate the segments and place them into a pot.

Place the pot with the mandarin orange segments over medium heat. Bring the mixture to a gentle boil, allowing the natural juices from the fruit to release.

Once the mixture begins to bubble, add 1/2 cup of sugar (about 100g). You can adjust the amount of sugar based on the sweetness of your oranges. Stir to help the sugar dissolve, then reduce the heat to low. Let it simmer gently for 35 minutes, stirring occasionally to prevent sticking to the bottom of the pot.

After about 35 minutes, the marmalade will start to thicken and develop a glossy sheen. To check for doneness, scoop some up with a spoon; it should be thick and hold its shape, rather than running off immediately. Turn off the heat. The marmalade will appear slightly runnier when hot, but it will thicken considerably as it cools, so it’s best to remove it from the heat when it’s just a touch looser than your desired final consistency.
