  • Cooking : Braise
  • Servings : 2 servings
  • Difficulty : Beginner

Ingredients

  • 2 Tbsp Olive Oil
  • 1 Tbsp Minced Garlic
  • 2 Ripe Tomatoes
  • 1 Fresh Egg
  • 1 Tbsp Sugar
  • 1 Tbsp Gochugaru (Korean Chili Powder)
  • 1 Tbsp Doenjang (Fermented Soybean Paste)
  • 1 Tbsp Soy Sauce
  • 200ml Water
  • 1/2 block Firm Tofu (approx. 200g)

Cooking Instructions

Step 1

First, prepare all the ingredients for the dish. Use about half a block of tofu (approximately 200g) and cut it into bite-sized pieces (about 2cm x 2cm) suitable for mixing with rice. Handle the tofu gently to prevent it from breaking.

Step 1

Step 2

Cut the two ripe tomatoes into your desired size. The exact size doesn’t matter, as they will break down and become part of the sauce during cooking.

Step 2

Step 3

Place a wide frying pan over medium heat and add 2 tablespoons of olive oil. Olive oil helps to enhance the flavors of the tomatoes and garlic.

Step 3

Step 4

Once the olive oil is slightly heated, add 1 tablespoon of minced garlic. Sauté over medium heat for about 30 seconds until fragrant. Be careful not to burn the garlic; sauté until a pleasant aroma is released.

Step 4

Step 5

As the garlic becomes fragrant, add the chopped tomatoes to the pan. Stir-fry over medium heat for about 1 minute until the tomatoes begin to soften and release some of their juices.

Step 5

Step 6

Push the tomatoes to one side of the pan to create an empty space. Crack the egg into the empty space and scramble it using chopsticks or a spatula until softly cooked.

Step 6

Step 7

Once the scrambled egg is ready, gently mix it with the stir-fried tomatoes. This combination adds a delightful balance of tomato’s tanginess and the egg’s richness.

Step 7

Step 8

Now it’s time to add the delicious seasonings. Reduce the heat to low, then add 1 tablespoon of sugar. Sugar balances the acidity of the tomatoes and enhances the overall savory flavor.

Step 8

Step 9

Next, add 1 tablespoon of gochugaru (Korean chili powder). If you prefer more spice, feel free to add a little extra. Gochugaru provides a clean, pleasant heat.

Step 9

Step 10

Add 1 tablespoon of doenjang (fermented soybean paste). Doenjang is a secret ingredient that adds depth and richness to the dish without being overpowering.

Step 10

Step 11

Finally, add 1 tablespoon of soy sauce. Soy sauce balances the overall seasoning and further enhances the dish’s aroma and flavor.

Step 11

Step 12

With all the seasonings in the pan, increase the heat back to medium and stir-fry for about 1 minute to allow the ingredients and seasonings to meld together well. Make sure to stir continuously to prevent the seasonings from burning.

Step 12

Step 13

Pour in 200ml of water. Then, turn the heat up to high and bring the mixture to a gentle boil.

Step 13

Step 14

Once the stew begins to boil vigorously, carefully add the pre-cut half block of tofu. Gently stir to ensure the tofu absorbs the flavorful sauce.

Step 14

Step 15

Continue to simmer over high heat for about 30 seconds. The goal is to have a slightly saucy consistency perfect for mixing with rice, not to completely dry out the liquid. After simmering for 30 seconds, turn off the heat, and your delicious Tomato Tofu Stew is ready! Serve over warm rice and enjoy.
