Main Ingredients

  • 480g blanched and prepared sweet potato stems
  • 1/2 onion
  • 3 Korean green chilies (Cheongyang peppers)
  • 1 red chili

Seasoning

  • Salt (to taste)
  • Fish sauce (for umami)
  • 1 Tbsp minced garlic
  • Sesame seeds (for nutty flavor)

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the onion thinly into shreds. Cut the red chili diagonally for a visually appealing look. Finely mince the Korean green chilies for a touch of heat. Having your vegetables prepped will make the cooking process much smoother.

Step 1

Step 2

Heat a pan and add the blanched sweet potato stems along with the minced green chilies. Season with salt and fish sauce. It’s important to start with a small amount and adjust to your taste as you go. Stir-fry over medium heat until the sweet potato stems are tender and have softened considerably. Be careful not to overcook or stir too vigorously, as this can impart a raw flavor.

Step 2

Step 3

Once the sweet potato stems have reached a tender consistency, add the minced garlic. Stir-fry together for about 1 minute, allowing the garlic aroma to meld with the stems. Adding the garlic midway helps prevent it from burning and ensures its flavor is well incorporated.

Step 3

Step 4

Now it’s time to add the prepared vegetables. Toss the sliced onions and red chilies into the pan and stir-fry quickly until they are vibrant and slightly softened.

Step 4

Step 5

Finally, stir everything together for another 1-2 minutes until well combined. Cook until the onions become translucent and all the ingredients are nicely integrated. Turn off the heat, sprinkle generously with sesame seeds for a nutty finish, and serve. This dish is wonderful served over hot rice or enjoyed as a standalone side dish. Enjoy your delicious Stir-Fried Sweet Potato Stems!
